About the Recipe

But that's not all, in this recipe even the skewer is edible: it's made with linguine! These stuffed zucchini skewers with minced meat and Halloumi are really tasty and simple to make. Not to mention the surprise inside: delicious linguine!

Ingredients

  • 1 zucchini

  • 125 g of halloumi

  • 125 g of minced meat

  • 100 g of linguine

  • 1 red onion

  • 1 yellow pepper

  • 2 cloves of garlic

  • Olive oil

  • 4 cups of tomato sauce

  • 1/2 tsp salt

  •  1/4 tsp pepper

  • 1/4 tsp  sugar

  • Herbs: Parsley, basil, dill, mint

Preparation

  1. Remove the ends of the two courgettes and cut them into 14 rounds. Then arrange the slices so they don't touch, as shown in the video.

  2. Cut the Greek Halloumi cheese into 6 pieces and insert them into the empty spaces between the slives.

  3. Make small, crushed minced meatballs and place them in the remaining spaces between the courgette slices.

  4. Insert  about 10 linguine as the skewers of courgettes, minced meat and Halloumi.

  5. Put the oil in a saucepan and cook the stuffed zucchini skewers. Then add the onion, garlic and pepper. Add the tomato puree. Season with salt, pepper and sugar and continue to cook for another 10 minutes.
